I usually add more vegetable amounts once I get cooking! I may also add more olive oil and butter if I think the sauce is not juicy enough. I usually put a lid over the veggies once they are simmering, and that adds to more veggie juice also.
Pasta Prima Vera
1/3 c. olive oil
1/3 c. butter
2-4 cloves garlic minced
1/4-1/2 c. chopped onion
Saute these items for 5-7 minutes
Add:
1 c. sliced mushrooms
5-6 chopped tomatoes
1 -2 cups broccoli florets
Simmer with lid on until veggies are done to your liking (not too mushy)
Serve over linguine. Add Parmesan cheese on top.
